I've been working on a new caramel recipe off and on for the last year. I've had a few issues with crystallisation and that's not going to work if we intend to sell the caramels to other shops where they could be sat on the shelf for a while.
I've spent Easter Sunday making a batch and I think I might have cracked it but we'll find out in the next few weeks.
I'll keep an eye on them and see how they hold up.
